Johnson Beth-El College of Nursing and the Rocky Mountain Seed Alliance, an Idaho-based non-profit, will sponsor Grain School Jan. 12-14 at various locations on campus.<\/p>\n<p>The course can be taken for credit and is open to the public. There is a free public forum from 6 p.m. to 10 p.m. Jan. 13 at Berger Hall with grain tasting and micro brews infused throughout an evening of grain nutrition and breeding science.<\/p>\n<p>The course will cover topics ranging from the history of grains, crop breeding, nutritional and health issues, baking, fermentation, cooking and production techniques. Local and visiting experts will present. Nanna L Meyer, associate professor, Helen and Arthur E. Johnson Beth-El College of Nursing and Health Sciences and manager of the Sustainability, Wellness and Learning initiative within Dining and Hospitality Services and Bill McDorman, director, Rocky Mountain Seed Alliance, will facilitate the course.<\/p>\n<figure id=\"attachment_123\" aria-describedby=\"caption-attachment-123\" style=\"width: 155px\" class=\"wp-caption alignright\"><a href=\"http:\/\/communique.uccs.edu\/wp-content\/uploads\/2010\/01\/nanna-meyer-large.jpg\"><img decoding=\"async\" class=\"wp-image-123 \" src=\"http:\/\/communique.uccs.edu\/wp-content\/uploads\/2010\/01\/nanna-meyer-large-199x300.jpg\" alt=\"\" width=\"155\" height=\"234\" srcset=\"https:\/\/communique.uccs.edu\/wp-content\/uploads\/2010\/01\/nanna-meyer-large-199x300.jpg 199w, https:\/\/communique.uccs.edu\/wp-content\/uploads\/2010\/01\/nanna-meyer-large.jpg 531w\" sizes=\"(max-width: 155px) 100vw, 155px\" \/><\/a><figcaption id=\"caption-attachment-123\" class=\"wp-caption-text\">Nanna Meyer<\/figcaption><\/figure>\n<p>The free forum will highlight the top presenters at Grain School, including Margaret Harris, associate professor, Helen and Arthur E. Johnson Beth-El College of Nursing. Harris will clarify issues surrounding gluten intolerance and modern wheat, shedding nutritional light on forgotten but returning ancient grains. The forum celebrates millers, bakers, malsters, brewers, and chefs and raises public awareness in support of Colorado farmers eager to try growing these drought-tolerant grains on small and medium-sized farms, according to Meyer.<\/p>\n<p>\u201cWhile largely left out of the local food movement, ancient and heritage grains are gradually becoming part of the local food revolution,\u201d Meyer said. \u201cThese grains are quite different in flavor and nutrition than what\u2019s currently holding a mediocre sandwich in place.
